| All foods are judged by their flavours
and freshness. They must be easy to use, and available
in precisely measured quantities. To meet these standards
of quality, different types of cheese need to be cut to
different sizes. Whether it's a well known Swiss make
like emmental, or a lesser-known variety like Reblochon,
we buy all our cheese specialities in the proper shape
and size for variety. We cut them into portions, some
by hand and some using special machines, with all the
precision you'd expect from a Swiss company. So no cheese
goes to waste when you use it; there's no hard rind, and
no dry or mouldy surfaces where a soft cheese has been
cut. There's a great deal of expertise involved in cutting
Brie, for example, which is usually mass-produced to fit
into a box. But we buy it as it should be sold, in flat
rounds, and cut it into neat, mouth-watering slices. |
